The Pacific Northwest wood-fired pizza brand spanning corporate restaurants, franchises, food trucks, and event catering has consolidated its entire operation on Square as it nationally scales
DISTRIBUTED-WORKFORCE/OAKLAND, Calif. -- (Business Wire)
Square today announced that Cascadia Pizza Co., the American Crafted Wood Fired Pizza ™ brand founded in Washington state in 2015, has returned to Square as its unified commerce platform after reevaluating the platform’s evolved restaurant and franchise capabilities. What began as a single food truck has grown into a multi-format operation spanning 17 corporate restaurants, additional franchise locations, food trucks, and event catering units across Washington, Idaho, Oregon, Arizona, and Texas. Cascadia returned to the platform in 2026, consolidating its core restaurant technology fully within Square by deploying Square for Restaurants, Square Franchise Suite, and a full ecosystem of hardware across every operating format.

Cascadia Pizza Co. started with a food truck, a wood-fired oven imported from Italy, and a belief that great pizza is best enjoyed around a table with your people. Co-Owners Thomas Reinhard, Christian Buck, and Calvin Freatman built the brand around old-world cooking techniques and Pacific Northwest ingredients, including locally sourced produce and wood for the ovens, and house-made recipes designed to create American Crafted Wood Fired Pizza™. As the brand grew from its food-truck roots into brick-and-mortar restaurants and a booming franchising model, the complexity of its technology needs grew with it.
Cascadia used Square early in its journey before moving to a different platform as its restaurant and franchise operations expanded. As the brand’s needs grew more sophisticated, Reinhard reached back out to reevaluate what Square’s restaurant and franchise products had become in recent years. What he found was a platform with capabilities that had evolved substantially since the initial partnership’s mobile usage: one capable of supporting corporate restaurants, franchisee locations, food trucks, and high-volume event catering within a single ecosystem, through the integrations, centralized visibility, and control a growing franchise organization requires.
“Cascadia operates everything from brick-and-mortar restaurants to food trucks and franchise locations, so we needed technology that could work across all of those environments while giving our team the visibility to grow,” said Thomas Reinhard, Co-Owner of Cascadia Pizza Co. “We had used Square earlier in our journey, when our business needs were less complex. But seeing how much Square’s full-service restaurant and franchise platform has advanced gave us full confidence that it was the right partner to support the next stage of Cascadia’s growth.”
One Platform For Every Format
The breadth of Cascadia’s operating environments – spanning dine-in restaurants, counter service, patio service, food trucks, and high-volume event catering – demands a technology platform that can flex across formats without fragmenting the business. Square’s hardware ecosystem handles each context: Square Register and Square Stand for restaurant and counter-service environments, Square Handheld for patio service and line-busting, Square KDS for kitchen workflow, and kitchen printers across applicable locations. For mobile and event operations, where connectivity has historically been a pain point for multi-format operators, Square’s offline capability gives Cascadia’s food truck and catering teams the reliability they need regardless of venue.
Above the single location level, Square Franchise Suite gives Cascadia corporate leadership centralized reporting and menu orchestration across both corporate-owned and franchisee locations, while each franchisee maintains its own Square account. Multi-location reporting allows the team to aggregate performance across locations and view results by region or by corporate-versus-franchise ownership, providing Reinhard and his team the visibility required to manage a growing national franchise system. The platform also covers guest engagement through Square Loyalty, Square Gift Cards, Square Marketing, and delivery integrations with Uber Eats and Postmates.
“Cascadia Pizza Co. is one of the most operationally complex restaurant stories we get to tell, with all concepts running on our single platform across five states,” said James Schonzeit, Head of Food & Beverage at Square. “Thomas’ advanced operating model required powerful infrastructure to scale, and Square’s evolution gave Cascadia a compelling reason to come back. That trust is something we take seriously, and we’re committed to being the foundation that continues to grow and innovate along with them.”
