Big Rock Brewery Inc.'s Barrel Aged Edition ales (cognac, sherry and bourbon) are ready to roll out, just in time for your holiday gift giving.

In the company's quest to brew deliberately different beers, this one ranks at the top in effort and creativity. Big Rock procured rare oak barrels from as far away as Spain for this offering. Not your typical oak barrels, the ones sourced for these ales were originally used to age the finest cognacs, sherries and bourbons. For this adventure, Big Rock would be inviting its magic into its delightfully original and unorthodox ales.

Every sensation found in a glass of these unique beers has its origins in the decisions of Big Rock's brewmaster, Paul Gautreau. "I've never worked with oak barrels of any type before, so this was a new adventure for us," said Mr. Gautreau, who is thrilled with the results. These are big, flavourful beers that offer sophisticated tones of bourbon, wine and oak.

  • Bourbon -- A rich, full-bodied beer featuring layers of bourbon and caramel, with an oakiness to the brew and a nice alcohol warmth (alcohol by volume: 11 per cent);
  • Sherry -- The warmth of the sherry barrels is present in the flavour. This beer is malty with a subtle dryness from the sherry;
  • Cognac -- Cognac is king! It's all about the oakiness of the barrels and the complex flavours from the cognac.
